Ari’s Recipe of the Month: Cheesecake Brownies

    Ariana E.

I love brownies, but I also love cheesecake. So, the other day, I was craving both and attempted to make them into one dessert. I am proud to say that I succeeded, and I realize now that my new recipe is the foolproof way to make the most delicious brownies to exist.

A fun fact about my family and me is that we love to bake. We have spent hours and hours trying to find the perfect brownie recipe. But as those who try this recipe will come to realize, the best way to make a brownie is to add cheesecake filling. It’s the perfect combination of both sweet and savory in one bite.

This recipe is great because it is flexible. The type of brownie does not matter, but I recommend brands like Betty Crocker. The vanilla extract is optional, but it does enhance the taste of the filling so I highly recommend using some. And lastly for the sugar—sometimes the filling tastes too much like vanilla, so if that is the case, then you should definitely add some more sugar. But regardless of your method, I guarantee your brownies will turn out delicious. Happy baking!

    Ingredients

    Brownies:

    • 1-count 18 oz box brownie mix
    • (Follow the instruction listed on the box)

    Cheesecake filling:

    • 12 oz cream cheese (1 1/2 8oz packages)
    • 1 large egg
    • 1 tbsp flour
    • 1/2 cup sugar
    • 1/2 tsp vanilla

    Steps:

    • Preheat the oven according to directions on the brownie mix.
    • Prepare brownie mix according to package directions and set aside.
    • In a medium sized bowl, beat the cream cheese for a couple of minutes until smooth and creamy.
    • Add in the egg, flour, sugar and vanilla and stir mixture until combined.
    • Pour all but about 1/2 cup of the brownie batter into a prepared pan.
    • Spoon the cream cheese mixture on top of the brownie batter.
    • Spoon the remaining brownie batter onto the top of the cream cheese mixture.
    • Using a knife, swirl the cream cheese and brownie batter together, creating a marbled effect.
    • Place in preheated oven and bake for 35 – 40 minutes
    • Remove from the oven and allow it to cool completely before cutting into pieces.
