There’s something comforting about these cookies. Maybe it’s the molasses—sticky, bittersweet, and just a little smoky, like a forgotten treasure unearthed from the recesses of your grandparents’ pantry—or the way the crushed cinnamon and cloves tickle your nose and conjure up fantasies of a candlelit kitchen on a snowy evening, even when it’s 72 degrees outside. Whether you’re baking them to wow your family or woo your teachers, this recipe will make you feel like the season’s head pastry elf.
Enjoy every warm, chewy, and spiced bite of this holiday delight!
Ingredients:
- 1 ½ cups white sugar, divided
- ¾ cup butter, melted
- 1 egg
- ¼ cup molasses
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon ground cinnamon*
- ½ teaspoon salt
- ½ teaspoon ground cloves
- ½ teaspoon ground ginger*
* I personally like adding a little extra cinnamon and ginger.
Instructions:
- Preheat the oven to 350°.
- In one bowl, combine the egg, butter, and sugar together. Then, slowly mix in the molasses.
- In a separate bowl, combine the dry ingredients (flour, baking soda, cinnamon, salt, cloves, ginger). Then, stir into the other bowl of the wet ingredients.
- Chill the dough for an hour, and then roll it into balls. Roll the balls in sugar, and then place them on a baking sheet.
- Bake until the tops are cracked. Enjoy!
